I have been a home cook ever since I was making peanut butter and jelly “sushi rolls” – don’t knock ’em till you try ’em!- with my sister in our parents’ kitchen, and my kitchen skills developed with each new recipe that I tried.
Which brings me to this blog. I love to explain why a recipe works, and I know that you’ll take the basics of how you made that dish, and apply that kitchen know-how to your next recipe!
For example, take a macaroni and cheese recipe. You’ll first make the roux – a flour and butter paste that you’ll use to create a creamy base sauce! For the cheese sauce, we would add milk, cheese, heavy cream, and a few other ingredients to finish it off. But look at you, makin’ that roux! You’re cooking now, babe! You can use that same roux technique as a base, add some chicken broth to create a creamy chicken pot pie base.. or add finely diced mushrooms while you cook the roux and make your very own cream of mushroom for the best-ever green bean casserole served at your thanksgiving table! No canned soup here – no offense, campbell’s!
