I can never resist a moscow mule. But add some juicy blackberries and lighten it up with a low-cal ginger beer? AND consider that this skinny blackberry mule has only 150 calories?! I am HERE for that party!

For each Skinny Blackberry Mule cocktail, you’ll need:
- 3-4 blackberries
- 1/2 ounce of fresh lime juice
- 1 1/2 ounces of your favorite vodka
- light or diet ginger beer (my favorite brand is Q Light Ginger Beer)
- A sprig of mint, for garnish
- A muddler or wooden spoon
- Cocktail Shaker – one like this works great!
Another fruity take on the moscow mule is my Strawberry Balsamic Mule. It kicks up the flavor with some balsamic vinegar, which sounds crazy but pairs perfectly with the lemon and strawberry.

In a cocktail shaker…
Muddle the blackberries with lime juice until the berries are broken down. If you don’t have a cocktail muddler, you can use the back of a wooden spoon 😉 Add vodka and a handful of ice cubes, and shake it all up. Strain your skinny blackberry mule into a Collins glass – that’s a tall skinny bar glass- over plenty of ice. Top with your favorite light ginger beer. Lay the sprig of mint on the back of your hand, and give it a little slap. This will help release the oils from the mint leaves and give your drink that little somethin somethin.


Skinny Blackberry Mule
Equipment
- Cocktail Shaker
- Muddler / Wooden Spoon
- Tall Glass (or Collins Glass)
Ingredients
- 3-4 blackberries
- 1/2 ounce lime juice
- 1 1/2 ounces vodka
- 4 ounces light / diet ginger beer (I like the Q brand)
- 1 sprig fresh mint
Instructions
- In a cocktail shaker, add blackberries and lime juice. Muddle until the blackberries are broken down.
- Add vodka and ice. Shake vigorously.
- Strain in to your serving glass over plenty of ice. Top with the light ginger beer.
- Place the sprig of mint on the back of your hand. Give it a light slap to release some of the oils, and place on top of glass. Cheers!
